Commercial Cookery Certificate III

Commercial Cookery Certificate III. We offer a more practical and flexible alternative to TAFE for Certificate III Commercial Cookery apprentices, with all the training done in the workplace.

Providing the kitchen has sufficient equipment, supervision and a suitable menu, there is no need to go to TAFE for either day or block release, as all training is done in your kitchen. One of our experienced and qualified trainers will visit your workplace at regular intervals to assess you, and progress you through this very exciting and challenging 3-year apprenticeship (The length of the apprenticeship can be shortened if you have prior experience or have partial qualifications in the hospitality industry).

There are many advantages to doing your apprenticeship on the job, as it allows you a greater opportunity to learn the various culinary skills within the familiar surroundings of your workplace. It will also give you the opportunity to design, prepare and cook various menu items that suit you, your employer and of course your customers rather than the set format TAFE tends to follow. This also means you don't have to go back to school (ideal for regional restaurants).

This apprenticeship can also be offered part time (6 years max) and is ideal for School students who wish to become chefs yet want to still continue there studies.

Mid Career Apprenticeships for 30 years and over (Commercial Cookery Certificate III).

This apprenticeship is ideal for anyone who wants to be a qualified chef and is 30 years or over. In addition to the normal incentives paid to employers, the Federal Government now are offering a further $7800.00 to apprentices or employers (depending on pay structure) for participating in an apprenticeship in commercial cookery in the first year, and $5200.00 in the second year.

This apprenticeship is delivered in the same way as a standard apprenticeship (see above), and all partial qualifications and experience may help reduce the standard time of 3 years.

This apprenticeship is ideal for the many cooks and kitchen hands that work in the industry but haven't got their papers.

TRAINEESHIPS

Kitchen Operations Certificate II

Certificate II Kitchen Operations is designed for those many kitchen hands that haven't got a qualification, and are looking to advance their skills in the kitchen. It covers food safety, OH&S in the kitchen and some of the basic cooking and food prep work typically done by kitchen hands.

It is also a great platform for anyone who wants to "test the water" in regard to pursuing an apprenticeship in Commercial Cookery, as all completed work is easily transferred as credits to the apprenticeship.

This certificate is available full time and part time, and proves to be very popular with both school students and mid career employees alike.

Hospitality Operations Certificate II and III

This traineeship is ideal for those who are working in the hospitality industry, front of house. You will learn all the facets of service in you café, hotel or restaurant and cover customer service, bar operation, coffee making, stock control, cash handling, food safety, responsible service of alcohol and much more. Most trainees complete certificate II in 6-8 months and certificate III in 12 months, and is very popular with high school students, as it gives them a nationally recognized qualification whilst continuing their studies. It also proves popular in restaurants and cafes as it allows students who are not yet 18 years to engage in the service of alcohol (must be under adult supervision).

This traineeship is ideally suited to school and university students who are working part time.
